If it works fine when the engine is warm, and under cold conditions, the starter turns but does not engage, something (dirt) is not allowing the starter to engage the ring gear. Chevys were famous for not engaging (selenoid system) due to the moving part of the selenoid sticking under cold conditions. I say take off, clean it and try again.

You can remove the gas tank, then pull flywheel cover, you will see the starter bendix, with your fingers turn it back and forth you will see how it pushes out when turned. chances are it went bad. if you have an air impact wrench the flywheel bolt is easy to remove. After new solenoid ($11 ebay) the engine would slowly crank. Dad insisted on a new starter ($50 ebay). Now engine would turn over good until compression stroke. Then slow down. Then speed up after compression. It was recommended to check slipper clutch on flywheel. Bearing surface on flywheel was very wavy. I installed a better used one ($25.

My 2000 S10's somewhat new, bout 5 months, starter will not engage. It was working fine a couple weeks ago, then out of the blue it stopped working, you could hear it spin and It tries to engage, you can hear it attempt.
